Malbec 50%, Cabernet 30% / Cabra Corral 1.850 feetasl;Tannat 20% / San Luis de Yacochuya 1.900 feetasl, Valle de Cafayate, Salta.
At our own property vineyards in Cafayate, from low yield vines, mainly balanced by their old age of 55 years and rocky soils, carefully selected grapes were hand-harvested at optimum flavour ripeness. This wine is born at one of the highest vineyards in the world – 1.800 mts above the sea level - on the slopes of the AndesMountains. The high altitude together with the wide thermal variation between day and night, provide exceptional climatic conditions. The sandy-rocky loam soil, combined with drip irrigation of pure waters from the Andes melted snows, give these wine unique features.
For this limited edition “reserve wine”, we follow strictly controlled vinification processes. Desteem is followed by alcoholic and malo-lactic fermentation, at constant controlled temperature ranging from 25 to 29 ºC. After 4 weeks maceration, only free run juice is selected to undergo a 14 months ageing in new French and American oak barrels. The wine is then blended (50% Malbec, 30 % Cabernet Sauvignon , 20% Tannat), Diatomaceous earthfiltration and bottled to spend 24 months aging in this container before going out to the market.
Malbec for nobleness, Cabernet Sauvignon contributes with personality and fruit characters and Tannat brings to this combination tannins and deep colour, to result in a harmonic equilibrium.
